Nutter Butter Balls/PB&J Bites



More chocolate! More trials and tests. Here is another versions I made this past week of the chocolate covered bites. I adapted the recipe from Bakerella again. This time I made some with jelly in the middle of them to mimick Peanut butter and jelly sandwiches. Although my Pb&j sandwiches were never coated in chocolate when I was a child. Just another benefit of being an adult I guess. I used Nutter Butter cookies and strawberry perserves. I personally liked the ones made with just peanut butter. And I found the ones filled with jelly were harder to dip in the chocolate. But I learned from the whole experience and ended up with chocolate! That's not a bad trade-off at all!

Here's a couple pictures. These are the ingredients. Nutter butter cookies, chocolate wafers and cream cheese frosting.



I put 22 of the cookies in my food processor and grinded them all up fine.





Then I added the whole can of cream cheese to it and mixed it up well.  I scooped them out, rolled them up and put them in the refrigerator to set while I melted the chocolate. After about 15 min, I dipped them in chocolate and put them on a foil lined cookie sheet to set.



On the left is the jelly filled one and the peanut butter one on the right. Try making them for yourself and tell me which ones you prefer.
