S'more pops



I've been captivated by the cake pops made on the Martha Stewart Show for months now. I made them for my babies 1st birthday instead of cake and they were a hit. Since then though I have been tinkering with the idea of doing gourmet type cake pops. More on what flavors I've come up with later, but today I worked on one of them and I documented it for ya. They really are delicious and a wonderful alternative to the typical decorated cake. Of course there are more steps involved and it can be time consuming, but like anything good it is worth it. Here is what I came up with.

S'more pops

Here's the ingredients. Two packages of graham crackers, 1 can cream cheese frosting, 1 pkg melting chocolate wafers (in this case I used candiquik)



Place the crackers in a food processor and pulse till fine crumb.



Like this.



Add one can cream cheese frosting and mix till combined.



Using a small cookie scooper, or just your hands, form into balls. Place on cookie sheet and put in refrigerator.

 Meanwhile, cut marshmallows in half and shake gently in confectioners sugar to keep them from sticking together.





I used a small flower shaped cookie cutter to press down over top of the cracker balls to form inside the cutter. Then, with the cracker ball still inside the mold, I placed a cut marshmallow on the bottom and stuck a stick through both pieces. It helps to keep the cracker ball from spliting or braking apart. Remove entire piece from mold and place on cookie sheet. Move on till all the cracker balls are formed with a marshmallow and stick.




I melted the chocolate and, while turning the stick, I spooned it over the pieces encasing the marshmallow and the ball together. I didn't bother to make sure that the top was covered cause I was going to re-dip it anyway after the rest had dried.



After dried, I re-diped the tops and, while wet, sprinkled crushed graham crackers on top. Then I stuck them in a block of styrofoam to allow them to completely dry.



Here they are all lined up like little soldiers. They are calling to me. But luckily Andy walked in just then and they called to him even louder. He couldn't quiet their noise in his ears and decided to do something about it.



There. That'll shut'em up!



I, for the sake of my thighs, will be sending these to school with my son tomorrow as a treat for his class. I am still testing these and haven't decided if this will be the final recipe. But please feel free to make them yourself and try them. And PLEASE let me know what you think. Good or bad.
